Strangely this is actually close. I think both guys have an "it" factor to them that gives their matches a feel that often disguises the problems of their respective styles. Over the years I've gone back and forth on Sabu many times, but right now I'm more in a "pro" mood than a "con" mood as I do think when the guy was on and with the right guy he really could have tremendous matches.
I can't believe I'm saying this but I remember liking Sabu's last TNA run and his ECWWE run. Not great stuff but stuff I remember thinking was "good" though the distinctness of the act may have helped matters (also his selling of the Pounce was fucking awesome). In watching stuff for the SC ECW poll, I've come to think the Sabu v. Taz matches are underrated. He also has a mini-series with Whipwreck that is really, really good shit. I like the One Man Gang house show match a lot. There is a really strong Al Snow v. Sabu fancam match from 95 and Sabu is pretty clearly the best guy in that match. The Cyberslam match with Scorp is overrated and the RVD matches aren't really any good, but there is a lot of good Sabu stuff if one is willing to watch.
To me the big difference between the two is that I think with Punk you can point to certain "runs" he's had where he was actively good or bad whereas with Sabu his output is almost a crapshoot. There are matches where he just falls apart mid-match. There are periods where he is awesome one match, shit the next, awesome the next match, et.
In a way this is to be expected as Sabu is the ultimate throw caution to the wind act in wrestling. And to this day he's one of the only guys around that I would go out of my way to see in almost any setting due to whacky matchup possibilities (Sabu v. Ricky Ortiz? I'd watch. Sabu v. circa 2010 Larry Winters? I'd watch. Sabu v. Paul London? I'd watch. Sabu v. Viscera? I'd watch. Sabu v. Sid? I'd watch...you get the point). He's the all time grab bag wrestler. With Sabu you take the good with the bad. It's just the way it is.
Anyway I like Sabu at this point in my fandom, but I voted for the (amazingly) less erratic Punk.

Well who wouldn't? Thats like saying Sabu vs Sydal.
Sabu was almost untouchable as far as having an aura around him but as a wrestler I'm not sure he's any better than Jeff Hardy, who I voted for Punk over.
