I threw this together last night and it was divine! Feel free to alter to your needs....
1 Medium spaghetti squash (about 4 cups) 1/2 Onion sliced and roughly chopped 1/2 red pepper sliced into bite size pieces 3 cloves garlic 1 tbsp olive oil 5 tsp of pesto (I used teaspoons because my tablespoon wouldn't fit into the container!) 2 tbsp parm cheese Fork squash and nuke for 6 minutes. Slice it in half (or if you have better knives than I do or more strength - just slice it in half). Scoop out the seeds, spray with olive oil and place face down on a cookie sheet that's been sprayed with cooking spray and bake at 450 degrees for about 20 minutes (till it starts to turn brown or get soft). Remove squash and using a fork, scrape out the insides and put into a strainer to drain. While it's draining saute the veggies and garlic in olive oil till soft. Put the squash, veggies and pesto into a box and mix well. Pour into a baking dish, sprinkle cheese over the top and bake at 350 degrees for about 45 minutes. Makes 4 servings 144 calories 8 grams fat 2.5mg cholesterol 181.1mg sodium 17.4 grams carbs dietary fiber 3g protein 3g My coworker said she's going to try it with goat cheese. I think that sounds wonderful and may try that next |
