Onion Soup

I just made this for hubby and he gave his thumbs up.

3 Tbsp. real butter
2 large Vidalia onions, thinly sliced
6 cups chicken or veggie broth
1/2 tsp. apple cider vinegar
3 Tbsp. minced parsley
1/4 tsp. dried thyme
sea salt & pepper
Toasted bread if desired. We used sourdough with mozzarella cheese melted on top.

Melt butter in large saucepan over med-hi heat. Add onions and cook until all onions are soft and caramelized (browned).
Add broth, ACV, parsley, & thyme. Add real salt and pepper to taste. Simmer on med-low for about 15 minutes.
Broil bread with cheese. Add a good sized piece to the bowl and spoon soup over the top.

On Phase 2 add a bit of flour to the butter onion mizture to thicken. I'd start with 2 Tbsp. The flour should be mixed into the butter well before adding liquids.

Tried this recipe yesterday - from Gary Null's website - was easy and delish!! I made some adjustments - used chicken broth, added celery, more herbs, cooked longer and pureed it.


Onion Soup


4 cups sliced yellow onions
¼ cup chopped fresh parsley
¼ cup extra virgin olive oil
2 vegetable bouillon cubes (Morga)
½ teaspoon freshly ground black pepper
2 ¼ teaspoons dried basil
1 ½ teaspoon garlic powder
3-4 cups water (depending on the consistency you like)

In a large pot sauté the onions and parsley in the oil over medium high heat until the onions are clear. Add the remaining ingredients, reduce the heat to medium, and cook, covered for 20 minutes.

Yield: 2-3 servings

You can always run through a blender or use a hand held blender to make this smooth.

thumb.gif I tried this french onion soup last night. This recipe gets a "10" from me. (The first recipe, I haven't tried the second one yet.) My daughter liked it too. Hubby hasn't tried it yet, but I'm sure he will like it. A friend gave us some homemade sourdough bread, so we were fixed up! tongue3.png
